If you want your pasta to have a good amount of protein, then try chicken bellagio. The original recipe has boneless chicken breasts and sliced prosciutto but you can use other chicken parts or sliced meats depending on what’s available.
Season the chicken with salt and pepper before coating with flour and breadcrumbs. Place the breaded chicken onto a flat grill or pan. Cook until golden brown and set aside. Boil the pasta until soft but firm.
In a separate pot, boil the parmesan cream while stirring to prevent burning. In another, mix chicken broth, butter, and basil oil. Add the drained pasta and toss until well-coated.
Divide the pasta into plates. Put some of the cream around this. Place the chicken on top, along with the sliced meats. Garnish with arugula and parsley. Squeeze a bit of lemon and sprinkle with cheese.
